Alcohols often have trouble dissolving in water because of different polarities of the two liquids (water and an alcohol). The more carbon chains it has, the harder it is for it to dissolve. That's why methanol, ethanol and propanol are miscible while all those above it are not, meaning they don't create a homogeneous mixture.
