    You would be going west.

Mount Everest is located in Asia, at the border between China and Nepal. The Amazon river is located in South America.

If you go from Asia to South America, you are travelling west.

You can be a little bit more specific by saying that you are going west-southwest, since Mount Everest is north of the equator and the Amazon river is located just below the equator.
