    Proteins are polymers made up of amino acid monomers, which have carboxyl (COO-) groups and amino (NH3-) groups, making the proteins amphoteric in nature.

    The proteins have primary, secondary, and tertiary structures which are formed due to different types of bonding in between the monomers.

    Since the proteins are amphoteric, extreme change in pH and temperatures, which cause changes in the H - ion concentration and cause the protein to lose its secondary and tertiary structure. Therefore, it loses its specific shape.

    This process of the protein losing its shape is called as Denaturing.
