In this experiment, DNS is converted to ANS. The optical density of ANS in solution is used as an indicator of sucrase activity. Why?

    When ANS is introduced into a solution which already contains DNS, an interaction occurs which cause an increase in sucrase activity. This why ANS in solution can be used as in indicator of sucrase activity.
