If the fatty acid tails of phospholipids were hydrophilic, and the phosphate heads were hydrophobic, you'd expect the bilayer to look like this:

    Then the look would be opposite of the actual membrane. The tails would be on the outside, touching the water. The heads would be inside, fearing the water and staying dry.
