Yeast can metabolize glucose and other sugars through a process of anaerobic metabolism, also known as "fermentation" (or cell respiration in the absence of oxygen), and then release CO2 as a waste byproduct. This CO2 waste is a valuable ingredient in food making processes such as bread and beers
