Why does a cracker begin to taste sweet after a few minutes of chewing?

    The transformation of starch into sugar begins in our mouth. Amylase is an enzyme that will break down starch into sugar. This is why when Chewing a cracker it begins to taste sweet because the enzymes in the saliva break down the starch into glucose sugar.
