If you use hot water, what will happen that will inactivate the yeast? (Hint this has to do with what will happen to the enzyme that catalyzes the reaction - NOT that they hot water kills the yeast.)

    Enzyme denatured as it is past the optimum temp. beyond optimum temp, enzyme activity rapidly decreases. high temp changes 3d shape of enzymes active site reducing formation of enzyme substrate complex and products.
