The property of water that is involved here is called capillary action. Through the process of capillary action water flows through the narrow stems and also travels against the gravity to reach the top. Without this capillary action it would not have been possible for any tree to remain alive. The capillary action occurs due to the intermolecular forces that cat between the surrounding surfaces and the liquid present. In this case water is the liquid and the stem is the solid surface that is mainly responsible for creating capillary action.
