The answer to this question would be because reaction that joining sugar will produce a water molecule.

The condensation reaction is a reaction that will combine two or more molecule and produce a small molecule like water. Reaction to create disaccharide (lactose, sucrose) sugar will need two monosaccharide sugar molecule and produce a bigger sugar (twice as big) and water.
