The heat moves from the hot surface of the skillet to the bottom of the egg.

The egg is being "cooked" by a transfer of heat defined (by its behavior in this case) called conductance. The heat is transferred from the skillet to the bottom of the egg which in turn dissipates heat to the top of the egg.
