When water is heated, the temperature eventually reaches a constant value and forms a plateau on the graph. What does the plateau indicate?

    It indicates a phase change that the water is boiling. Water can't get any hotter than 100 degrees Celsius at STP (Standard Temperature and Pressure), after that it becomes steam, that's what I think
