    n the case of fatty acids with a double bond, it is an unsaturated fat. However, if there is no double bond (they are all simple) we refer to a saturated fat. The latter are in a solid state, are harmful to health, by increasing the "bad" LDL cholesterol. Instead the first ones are good fats, they raise the "good" HDL cholesterol.

    The double bonds can be oriented differently (cis or trans) in fatty acids. In the case of the cis form, it implies a fatty acid with a certain curvature and corresponds to the healthiest fatty acid. In the case of a trans orientation, the fatty acid acquires a more straight form and corresponds to the most harmful.
