Salivary amylase is an enzyme found in the mouth. It breaks down starch into sugars. Why will salivary amylase NOT break down proteins? a. The enzyme is the wrong substrate for proteins. b.     It would be "C". You can actually spit in test tube and carry out digestion of starch in a test tube I did it in school for a science experiment and it was super gross.
