Carbon has multiple valencies and can undergo stable hybridization of its Orbitals to combine with different elements to form a polymeric chain. Sodium has a fixed orbital and forms Ionic compounds by donating electrons while Carbon shares the electron and can do it with another Carbon if the need arises.
