It comes down to the brewing cycle and the waters exposure to the coffee while at perfect temp. Colder water will result in flat, tasteless coffee, too hot water will burn the coffee.

The hot temperature extracts the coffee flavor from the groups. This allows a deeper and richer coffee taste.
