The most popular ones are VxWorks, LynxOS, Integrity by Green Hills - Airbus uses this on some of their aircrafts including the A380 And there are lots of programmers who can get up to speed in them quickly (including in Ada). Non-safety critical software, both on and off the aircraft, will be written in any of the big languages of the day: Java, C#, Visual Basic, C, C++, Python, Perl, Ruby, etc.
