    Parallel plots, yes, are two or more plots within a story. However, that’s just a general understanding of what plots are. Parallel plots can also be called "parallel narratives" or "parallel stories." There is a common misconception that (and it is almost a misnomer) that parallel plots happen at the same time-concurrently. This, although, is not generally the case. A story with parallel plots tends to be told "out of order" or in a nonlinear fashion meaning there could be flashbacks, dreaming, shifts in timelines, etc. What makes the plots parallel is that these plots is a link both plots have to a common element that could be anything from a theme to a just a character. With all that in mind, again, parallel plots, true, are stories containing two or more plots.
