It's permissible to delete a word or phrase from a direct quotation as long as you don't change the meaning of the quote. To indicate your deletion in the quote you would

    In between the words you deleted use ellipses, three dots in between. For example "I enjoy the red cars ... because they're my favorite"

    when the original quote was "i enjoy red cars every day because they're my favorite"
