Yosemite has spectacular scenery and half-time bears.

Parallel structure is when the grammatical structure across equal phrases is the same. The grammatical structure for spectacular scenery is adjective-noun. This needs to be the same after the conjunction and. The original sentence has two many words. By eliminating "which has", the grammatical structure changes to adjective-noun, just like the first item in the list.
