The speaker uses "island hopping" to describe an activity for tourists. The term "island hopping" means to travel from island to island, visiting each island that is either close to another island or in the same chain of islands. Island hopping is often part of a cruise holiday. The cruise ship will dock at the harbour of the biggest or main island and then tourists will take smaller boats to travel around the smaller islands. An example of this is the Seychelles Islands in the Indian Ocean.
