They are dark orange in color and somewhat crispy. When they are put in food, they are usually crushed between the cook's fingers. They color everything a beautiful golden yellow, even the cook's fingers! The highly prized spice has been used for centuries in Egypt and other Middle Eastern countries as a seasoning and a dye. Today, it used in many Spanish foods, such as paella (pa A ya), which is a seafood and rice dish, in soups and even in desserts.
