This term is usually often used when referring to poetry and pretty much means that lines will rhyme in a specific order. For example line every two lines will rhyme with each other.
Example:
The dog ran
Into the garbage can
The cat said meow
While the dog said 'ow'

A Rhyme Scheme refers to the particular lines in a piece of poetry that rhyme, usually by using words at the end of each line that sound similar.
