Because 1492 was the year when Europeans started coming over to the Americas along with their diseases (small pox) and Native Americans did not have an immunity to those diseases carried over by Europeans. Moreover, Europeans didn’t even know the Americas had existed prior to 1492 so it wasn’t possible for Natives to be exposed to foods from Europe since they hadn’t set foot on the Americas until after 1492.
