Why would Luther's beliefs and calls for reform spark wars?

They sparked wars because there were those who supported them and felt that the Catholic church was corrupt, and on the other hand there were those who supported the Pope and believed that Luther and his supporters were blasphemers. Wars were common for this in the British isles were thousands of Catholics and Protestants were killed in wars regarding religion.
