The kind of heterogeous mixture that water and oil form is a suspension because the two lquids separate and can be easily distinguished. An emulsion, is an heterogenous mixture where small drops of one of the liquids disperse into the other liquid, so they form a stable mixture that will not separate quickly. Mayonaisse is an example of emulsion, because it consists of two liquids (oil an eggs) dispersed one into the other. Milk is also a emulsion of fat and water.
