Jack should remove the maximum and minimum weight potatoes from the average weight of the potatoes to compensate for the extremes. Therefore, we are left with a data set of:

    8, 9, 11, 7, 7, 8, 9, 7; so n = 8

The sum of these is 66

The average weight of each potato is:

    66/8

    = 8 ounces
