Why does the hot water turn purple when poured over red cabbage leaves?

    Pouring hot water over a red cabbage would turn water into purple because the dye in the cabbage called anthocyanin is being extracted. This pigment is used as an indicator for acids and bases. When it is added to an acid, it changes the color of the solution into pink while it changes into blue when added to a basic solution.
