    Quorum sensing is characterized by a system of intra and interspecies communication of microorganisms, based on the emission of stimuli and responses dependent on population density. This type of interaction reflects the behavior of microorganisms, demonstrating the ability to inhabit different environments, capturing the information of their environment, communicate with different species, monitor their population density and mainly regulate their gene expression by controlling cellular processes such as sporulation, biofilm formation, expression of virulence factors, production of bacteriocins and antibiotics and bioluminescence. It is also believed that cellular communication system play important roles in the microbial ecology of foods, both in the deterioration of these products on the multiplication of pathogens and toxins.
