First things first: definition. According to Wikipedia, Food Security is: the measure of the availability of food and individuals' ability to access it. But how do we measure this availability? What are the parameters we use to understand how accessible food is?
The World Health Organization utilizes three parameters: food availability, food access, and food use and misuse.
The Food and Agricoltural Organization adds the concept of "stability over time" that has to be used as a filter above the other three.
Now, this is how we measure food security according to International Organization standards, but I suppose you were looking for what are the differences across the world.
I would say that two are the parameters that you should consider: war and war. From Yemen to Central African Republic you can see a strong correlation between those two phenomena. Not even the most advanced economies in the world were able to lower the tax of absolute poverty, which makes the food less accessible according to what we said earlier, but you can find that those countries like Afghanistan which have been fighting long and exhausting wars for decades are now facing famine issues. We might talk about economic models, but I assume the first and innermost motivation for food (in) security has to be related to war.
