High blood glucose and Insulin Hormones should be high in the blood.

    Explanation:

Hot dogs and fries are high carbohydrate calorie foods. There they are digested and metabolise into the blood stream directly at the duodenum. The oil globules of the fries is not absorbed directly into the blood streams, rather, the oil is absorbed by the lacteal, and later passed into the blood.

Therefore if blood test is conducted shortly, glucose level of the blood should rise, and as homeostatic mechanism of regulating this by the body, insulin from the beta-cells of the pancreas is secreted into the blood stream to ensure cellular utilization of the glucose in the blood. it does this through mediation of activities of Glut transporters which convey glucose into the cells.

Therefore, high blood glucose and Insulin Hormones should be high in the blood.
