    When the starch would be combined with the water and then heated, the individual starch granules would then absorb the liquid and would then swell in the process known as gelatinization which is then the answer. When the sugar would be heated, the sugar will melt and would change color.

    Gelatinization is a process where starch is mix with water or other liquid and put to fire, individual starch granules absorb the liquid and swell. This causes the liquid to thicken but gelatinization occurs at different temperatures for different types of starch and high levels of sugar or acid can inhibit gelatinization, while the presence of salt can stimulate it.
