What are chemical leaving agents? How do they work?

    Chemical leavening agents are baking soda and a mixture of baking powder. It reacts immediately when added to liquids because it causes two separate reaction to occur in the dough. The first reaction happens when the baking powder is mixed with liquids; it causes carbon dioxide to be produced. The second reaction occurs when the heat mixed during the baking process; causes further expansions.
