The purpose of the probe of the thermostat on an appliance plug is mainly to transfer heat from the appliance to the thermostat. This is mostly to monitor the heat energy utilized and/or released by the appliance. Some appliances have manual control or switches which allow the user to optimize and decide the functionality of an appliance (i. e. simmer, fry, etc option for a pan with a thermostat).
