The British, French, and Spanish had

different interests in North American expansion. What made

them begin a conflict that enlarged to include global territories?

exactly what the question said, territories/land they all wanted it to expand their empires and "kingdoms" if you will. The British wanted it for more taxpayers, french for the fur trade, the Spanish wanted the gold and silver.
