Because Fermentation is required, so if it has a slant, oxygen exposure would prevent. fermentation. In order for fermentation to occur, we need to bacteria to grow and start the process. When it's exposed to open environment, even a certain amount of heat would be able to kill bacteria that needed for the fermentation process.
